What happens when a French chef and some classic Americana collide?

Jean-Luc Salles, a trained French chef with years of experience running high-end kitchens isn’t the person you’d expect to be slinging lunch in a 1960s Airstream trailer in a parking lot. But his talent and his commitment to using the best ingredients has brought a little class to the food trucks of Santa Fe.

Although he says it’s easier and less stressful than restaurant work, he’s still working before 8am in the prep kitchen, before opening the Airstream at 11am to serve folks savoury crepes, sandwiches and ‘frog dogs’ – hot dogs served in heated French baguettes with a range of fillings.

‘Getting to talk to the customers is one of the great things about it,’ says Jean-Luc about his eclectic clientele. As is getting to see his family in the evenings and at weekends.
